An approximate date is far more useful than none. It tells me straight away whether I’m free and what the season will be offering.
Headcount drives the format more than anything else — it’s the difference between a seated tasting menu and a grazing table people circle all night.
Vegetarian, vegan, keto, gluten-free, allergies — tell me early and it shapes the menu from the first draft rather than getting patched in at the end.
Relaxed and grazing, or seated and ceremonial? A birthday, a business dinner, a quiet anniversary? The mood changes the menu as much as the numbers do.
